I've been trying to add lunch or dinner knives to a couple of 'antique/vintage' SS flatware patterns and in my search have frequently come across other patterns listed as 'sterling handle with stainless blade'. I believe some of these patterns was discontinued prior to popular use of stainless blades.

Is it a common practice to replace the blades and how does this replacement effect the overall antique/vintage value of the piece?

I was told that one reason why knives are so scarce is because the blades rotted or rusted and the entire knife was discarded - what do you think?

It's Zelda again adding another question...what materials were used for plated blades, and were there other materials were used that weren't plated?

Vintage dinner knives had plain carbon steel blades or, after 1840, silver-plated carbon steel blades. Some dessert (now called luncheon) knives had the same, but others had silver blades. Stainless steel was invented in 1914 and was applied to eating knife blades from about 1917 on. It is best to replace carbon steel or plated blades in like kind, but they may be difficult if not impossible to find, depending on the maker and pattern. In some cases, it may be possible to replate blades. If necessary, then go with stainless blades and accept the slight reduction in value.
