Above are some pictures of a server that I believe is called a whitefish server. This one is not marked and I believe it to be silverplate. The construction is very interesting as the top paddle is kept in the open position by a hidden spring, but a light pressure on the upper thumb rest lowers the paddle to hold the food.

I do not recall seeing any servers of this type with an American mark and suspect this one is from a European country. This type is extremely easy to use and wonder why more are not seen.

I agree; I've only seen a very few with this sort of mechanism, but all of them have been European -- and most have been plated rather than solid. I think I remember one that was solid, and French, but not absolutely sure of that memory as it was many years ago.

This is the fifth one of these that I have seen, including two by Gorham. Below are photos of a rather unusual example by Wm. Gale & Son which features an engraved medallion. It is marked 925 Sterling and it has the Gale date mark for 1862.
